Frittata Muffins: Breakfast or Dinner? Be a rule breaker!

INGREDIENTS
•6 large eggs
•1/3cup heavy cream
•3 slices deli meat diced
•Handful of fresh spinach chopped
•¼ cup frozen corn
•1/3 cup of shredded cheese (any)
•2 diced scallions
•Salt and pepper


DIRECTIONS
1.Preheat oven to 350F.
2.In large bowl, beat eggs and cream well.
3.Add remaining ingredients and mix well.
4.Spoon batter into greased muffin tin, about ¾ full. 
5.Bake 18-20 min then let cool completely.
6.Use a pairing knife to free the edges of the muffins to release them.
