•1 lb. of pasta
•3 tomatoes (firm, diced)
•1/3 cup of pitted Kalamata olives chopped
•1/3 cup of feta cheese
•1/2 tsp minced garlic
•1 lb. large shrimp or chicken strips
•10 leaves of fresh basil
•Salt and pepper
DIRECTIONS
•As you prepare this dish, save a small quantity of every ingredient, untouched, for your muffin tin presentation.
1.Dice your ingredients as needed and put your water to boil with salt.
2.When your water is boiled, throw in the pasta and turn on your skillet.
3.Heat the oil and garlic and sauté your protein.
4.Drain the pasta, cover with a little olive oil, and toss with protein in a separate bowl.

5.Add the tomatoes, olives, feta and basil.
6.Toss, add your salt and pepper and serve.
